Boulgeur Pilau


1 Small onion
1 Cup of rice or cracked wheat
3 Cups of water
¾ Cup of lamb
2 Teaspoon of salt
3 Tablespoon melted butter
¼ Teaspoon pepper

Preparation:
          Cut meat into cubes, and put into a saucepan with water and salt. Let boil until meat is nearly done. Then add rice or cracked wheat and cook 30 minutes, not allowing the stock to reduce to less than 2 ½ cups. Brown finely chopped onions in butter and pour over the meat. Set aside for 15 minutes settle.
